The goal of the Banquet Sous Chef is to manage the Banquet culinary department, which includes IRD and the employee cafeteria. The Banquet Sous reports to, and works closely with the Banquet Chef and Executive Chef, to run and maintain operations and quality standards. An ideal Banquet Sous will accomplish their tasks by monitoring the daily functions of the culinary department, including providing support and guidance to the culinary team, ending in a positive guest experience. Responsibilities include: - Support senior leadership by developing and assuming basic management responsibilities.
- Working with all departments within the culinary division and all other hotel departments, including the sales and catering team.
- Supervise the preparation and cooking of various food items.
- Develop and implement creative menu items that adhere to Banquet and Executive chef's standards.
- Plan, coordinate & implement
- Manage hourly kitchen employees through scheduling, payroll, training, coaching, evaluating and hiring.
- Overseeing all Banquet culinary ordering and maintain relationships with suppliers.
- Lead and coach the team towards achieving exceptional guest service and employee satisfaction results.
- Monitor food production, ordering, costs, quality and consistency on a daily basis.
- Ensure proper safety and sanitation of all kitchen facilities and equipment.
- MUST have a flexible schedule, as our event schedules are a mix of AM, afternoon, and PM functions. Schedules are based on needs for events.
- Understand and utilize computer systems, email, calendar appointments related to the operation.
- Assisting Banquet Chef in menu and recipe development.
- Overseeing In Room Dining and employee cafeteria.
- Organizing prep lists, prep schedules, and event timelines.
